Elysia was born from an ambition: to create the first great Mediterranean single malt, under the blazing sun and in the arid lands of Cyprus. It all began with a meeting between Alexandre Sakon, creator of the NEOC barrel, and Aristide Aristidou, a seasoned distiller recently returned from the United States.

Their deliberate choice of an island as a production site imposes constraints that force Elysia's singularity. Its Kythrea barley is cultivated locally according to ancestral practices, then malted and roasted in the distillery itself. In the latter, the iconoclastic still, combining the latest technologies, allows for a masterful work, adjusting every detail to capture the essence of Cypriot barley. Finally, aging in NEOC barrels, recycled from the great vintages, concentrates the aromas in a climate whose low humidity tightens the wood fibers.

An ode to resilience, Elysia is a return to the source, an immersion in a land both arid and fertile. A whisky born from an island where everything remains to be written, where the expression of the earth is imprinted without filter, in a raw and sincere harmony.

Nose : A rich and enveloping first breath, where malted cereals intertwine with the depth of brown sugar syrup. The sweetness of caramel melts into aromas of velvety cocoa and roasted nuts. After a few moments, the nose softens, allowing accents of marzipan and gingerbread to blossom, always supported by the common thread of cereals.

Bouche : A delicate, almost creamy texture that glides across the palate like a melting chocolate truffle. The indulgent profile expands with notes of apricot jam, bitter orange marmalade, and dark cocoa ganache. Gradually, a touch of toasted, lightly smoky barley emerges, providing a subtly spicy structure. The result is a refined dessert, delicately sweet but never heavy.

Final : Soft and muted, the finish lingers with a subtle warmth, marked by notes of caramelized Brazil nuts, bitter cocoa, and macerated prunes. A final burst of toast recalls the imprint of cereals, before fading to a hint of dried fruit and honey.
